Menu Plan Monday: Acorn Squash Edition

Winter means my sweet little Camas Farmer's Market is in hibernation, as are most other farmers' markets in the area.  And while my garden IS growing (slowly), it isn't really a primary source of food stuffs.  Happily, there is one winter market in the area that operates all season--the Hillsdale market--only 30 minutes from the house.  We usually make a day of it and catch some estates sales or the fabric store.

A winter market is usually good for lots of potatoes, onions, squashes and tree fruit.  We found some beautiful little butternut squash, sweet potatoes, and an acorn squash to replenish the dwindling supplies.  (Did you know, sweat potatoes and yams should be stored in a warm place, not the fridge? That'll keep them tasting sweet.)

Today was also our Azure Standard delivery day.  I loath to grocery shop so ordering some things in bulk for a monthly delivery makes me happy.  I ordered last week sometime for today's delivery, the promptly forgot what it was I ordered.  Until I saw the 35 pound box of acorn squash.  Yep, 35 pounds.  Don's always complaining that we don't have acorn squash often enough.  We have butternut, buttercup, kabocha & hubbard squashes but acorns are rare.  But it was such a good deal ($9 for 35 pounds) I couldn't not, but since I don't usually order produce from Azure (if I want that kind of produce, I usually go farm direct) it had completely slipped my mind.  I'm afraid to look to see how many acorn squash it takes to make 35 pounds.  I'm guessing I won't hear complaints about not enough acorn squash any time soon.

Don tells me he can eat a roasted acorn squash every day.  We're about to test that theory.  But in the meantime, I'm on the hunt for other ways to eat these things...

  1. Blech. I don't like squash. I keep trying to like it. I really do. I can't. I would starve this week at your house. Guess this won't be the week to visit...
