Menu Plan Monday, April 6

Last week was spring break.  The girls were with their mom, which gave us a spring break too.  I got to be lazy in the mornings because I could work into the evening.  Don spent the week fishing.  It was very relaxing! No menu planning required because I hardly cooked.  Except for finally getting to my beef stock project.  I've been meaning to make and freeze beef stock ever since the side of beef came in last fall.  Beef stock takes 12 hours of simmering in the oven, so it's definitely a winter thing.  I ended up with 8 quarts safely tucked away in the freezer.  No more weird, salty, beef stock for us!  That should keep us until next fall, unless I go crazy.

We actually had sun this weekend, so the garden is planted--beets, radishes, chard, spinach, carrots, snap peas, and more--and the pantry is cleaned out and organized.  I even cleaned the oven and the front porch!  Amazing how much can pile up!  I will blog pictures of the garden just as soon at that pesky camera shows up again.

This week, we're back to school, but it was nice while it lasted! This week is a pretty average week.  Stuff going on, but not so much we'll go crazy. The girls' sectional meet was today. Poor Hannah had a horrible head cold!  Next stop, State Championship in May!

Baking: Cherry-Cornmeal Upside-down Cake (super yummy!)
Soup: From the freezer. Stores are getting low, but there are still 3 jars hiding in there.  I'll have to go back to making soup again soon!
