Christmas Countdown: Week 8?

I've lost track of the weeks, and this isn't really a Christmas cookie recipe, but it was a sweet treat. There has either be a lot going on or a low amount of energy. The Halloween interlude made me really lose interest in sweets for awhile, Christmas cookies included. We have a couple bags of marshmallows left over for a project a long, long time ago. When I was cleaning out the baking supplies, those bags of marshmallows floated to the surface and are now a constant source of inquiry by the girls, when are we going to use those, what can we do with them, why do we have them. Grandma Karen made rice crispy treats when we were in Minnesota so now the girls know those don't only come in a blue wrapper but could be made at home. Bummer. Then I came upon a most diabolical discovery, rice crispy treats don't have to made out of rice crispys. Any cereal will do the trick. So why not combine one of my favorite cereals with marshmallows in a compromise of nutrition (fiber and protein) with crap (sugar and hfcs). So last weekend, we make rice crispy treats with Kashi. Then they get at least 2.5g fiber and 3.25g of protein with each serving of sugar. Compared with 0g fiber and 0.25g of protein in rice crispy treats. And it worked pretty well for a few days. The girls were impressed that they were getting something with marshmallows in it and I didn't mind because there were other things they needed. Until someone at the gym spilled the beans that it was Kashi cereal. Dang it. Another plot to encourage nutrition foiled by marketing.
