Picky Chickens, Less Picky Snackers

We must have the pickiest, most spoiled chickens in the universe or even they are tired of all the zucchini, but I found a new recipe. At this point, I don't even look at a zucchini recipe unless it calls from 5 or more cups of zucchini, so when I found recipe for Zucchini Crumble from Farmer John's Super Hippy Vegetable Cookbook and it called for 6 to 8 cups of zucchini, we were in business! Of course, anything with 3 cubes of butter, 3 cups of sugar and cinnamon and nutmeg has to be yummy. I got sidetracked in the middle of making the "crumble" so it got over mixed and doesn't look great, but it was a hit! I used the light colored zucchini so it looks (and almost tastes), like an old-fashioned Dutch apple pie. The recipe isn't available online, but let me know and I'll send it along.

  3. I've been running all over since Saturday. If feels good to be home and able to get caught up!

I found the zucchini crumble recipe online so I didn't have to type it in (phew), here it is: http://newsok.com/article/3095994 I found it worked best if the zucchini was sliced very thin. I think it absorbs the lemon and sugar best that way.

    Enjoy!
